With the holidays now behind us, I was wanting to find something a little less indulgent so my waistline would stop expanding for a while. Chicken is usually a good choice for the calorie-conscious, provided it doesn't come with a sauce, gravy, or other accessory that makes up the difference. And it's well known that baked foods tend to be healthier than fried. So, when I came across this recipe it seemed to be a good choice to meet my goals.
And, it is... except for one key point. While it does have maple syrup in the marinade, the quantity is very small so the result is tasting only a hint of sweetness. This is balanced by the inclusion of apple cider vinegar, which adds a hint of tartness. Overall, it's about an even wash between the two. But, that also means there's plenty of room to add other touches of flavor... some suggestions are included in the recipe notes.
So, if you're looking for a basic recipe for cooking chicken that you can build on, this one works.
