Preheat oven to 375 F. Spray a 9 x 13 casserole dish with nonstick cooking spray.

Season both sides of the chicken breasts with lemon pepper, then place in the casserole dish.

In a medium bowl combine honey, mustard, lemon juice, and paprika, and mix until well blended. Pour mixture over chicken, coating all pieces evenly.

Bake uncovered for 20-25 minutes or until a meat thermometer inserted into the thickest part of the chicken reaches 165 F.

Remove dish from oven. Top each chicken breast with 1 tablespoon of bacon and 1/4 cup of cheese. Return to oven and cook until the cheese has melted and is starting to brown (about 10 minutes). Let rest 5 minutes before serving.
