Looking for something quick but different? Try this out - meatballs made with ground chicken, simmered in an Alfredo style sauce and served on a hoagie roll. Definitely not what you'd expect in a sandwich!

Meatballs made with ground chicken, simmered in a homemade Alfredo sauce and served on a hoagie roll.

In a large bowl combine chicken, salt, garlic powder, onion powder, Italian seasoning, pepper, breadcrumbs, cheese, egg, and one tablespoon of the olive oil. Mix together until evenly combined.
Form the mixture into 12 meatballs and set aside.
Heat the remaining olive oil in a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides. Remove meatballs and set aside.
Using the same skillet, reduce heat to low. Add butter and heavy cream, and simmer for 2 minutes.
Add garlic, Italian seasoning, salt, and pepper and mix well.
Add meatballs back to the skillet, cover and simmer for 10 minutes.
Stir in Parmesan cheese until well blended, then serve.
While the meatballs are simmering in the Alfredo sauce, turn on the oven to the Broil setting. Slice the hoagie rolls open and butter the insides.
Place the rolls in the oven for 1-2 minutes to toast the insides, then remove and serve.
