An updated version of an old-fashioned casserole.

Adapted from Just A Pinch

Ingredients
  • 1 package long grain and wild rice, uncooked (6 oz)
  • 3 cup chicken breast, diced and cooked
  • 2 can green beans, cut and drained (14.5 oz)
  • 1 small onion, diced
  • 1 jar pimento, diced (4 oz)
  • 1 can condensed cream of celery soup (10.75 oz)
  • 1 can mushrooms, sliced and drained (4 oz)
  • 1 cup mayonnaise
  • 3 cup Cheddar cheese, shredded
  • salt and pepper (to taste)
Instructions
  1. Prepare rice according to package directions. Set aside.

  2. Preheat oven to 350 F. Spray a 9 x 13 casserole dish with nonstick cooking spray.

  3. In a large bowl, add cooked rice and all remaining ingredients except 1 cup of shredded cheese, and mix until well blended.

  4. Pour mixture into the casserole dish and top with remaining cheese.

  5. Bake 25-30 minutes or until bubbly.
