An updated version of an old-fashioned casserole.

Prepare rice according to package directions. Set aside.
Preheat oven to 350 F. Spray a 9 x 13 casserole dish with nonstick cooking spray.
In a large bowl, add cooked rice and all remaining ingredients except 1 cup of shredded cheese, and mix until well blended.
Pour mixture into the casserole dish and top with remaining cheese.
Bake 25-30 minutes or until bubbly.
