Description

A hearty soup to curl up with on a cold winter's night - or any other time of year.

Adapted from Yummly

Ingredients
  • 1 lb lean ground beef
  • 1/2 cup onions, finely diced
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 2 cup potatoes, peeled and cut into small cubes (Yukon Gold potatoes recommended)
  • 4 cup beef broth
  • 1 can tomato puree (14.5 oz)
  • 1 can petite diced tomatoes, undrained (15 oz)
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • 1/2 cup frozen carrots
  • 3/4 cup short or soup pasta, uncooked (elbows, small shells, rotini, ditalini, penne, etc.)
  • 1 tsp Worcestershire sauce
  • 1 tsp dried parsley
  • 1/2 tsp dried basil
  • salt and pepper to taste
Instructions
  1. In a soup pot over medium high heat, add ground beef, onion, garlic, and 1 tsp salt. Cook until meat is no longer pink, breaking it into crumbles as it cooks. Drain any excess grease.

  2. Add all remaining ingredients and stir to combine. Bring mixture to a boil, then reduce heat and simmer for at least 30 minutes or until the potatoes are cooked through.

Notes
  • This recipe can be changed to suit your individual tastes by adjusting the quantities and types of vegetables and pasta. The soup in the photo contains ditalini pasta (sometimes called "salad macaroni").
  • To help the potatoes cook through without getting mushy, cut them to roughly the size of the other vegetables (1/4"-1/2" cubes)
  • The finished soup is somewhat thick. If a thinner soup is desired, stir in hot water 1/2 cup at a time until the desired consistency is reached.
