Hearty Beef And Barley Soup

Heat a large pot on high heat. Add the olive oil and beef and cook for 10 minutes, stirring occasionally, until the beef starts to brown.

Reduce heat to medium and add carrots, onion, and garlic. Cook for 5 minutes.

Add tomato paste, thyme, salt, and pepper, and mix well. Add broth and barley.

Reduce heat to medium-low. Cover and cook 1 1/2 hours or until meat is very tender.
