Another busy weekend means it’s time to pull out the Instant Pot. This dish doesn’t disappoint either – juicy chicken breasts and a tangy sauce with honey, garlic, and other seasonings.

Instant Pot Honey Garlic Chicken

Place the chicken breasts in the bottom of the Instant Pot. Season with salt and pepper.

In a medium bowl combine honey, soy sauce, onion, ketchup, vegetable oil, and garlic. Mix until well blended, then pour mixture over chicken.

Close the lid on the Instant Pot and set the vent valve to the Sealing position. Press the Pressure Cook button, select High Pressure, and set the timer for 15 minutes. At the end of cooking, allow the Instant Pot to perform a natural release for another 15 minutes.

Open the valve to Venting to relieve any remaining pressure, then open the lid and remove the chicken breasts, leaving the sauce in the pot.

Press the Sauté button on the Instant Pot and bring the sauce to a boil. Mix cornstarch and water to make a slurry, then mix it into the sauce and stir until thickened. Turn the Instant Pot off.

Cut the chicken breasts into bite-sized pieces and add back to the sauce. Mix together until the chicken is evenly coated. Garnish with sliced green onions and/or sesame seeds when serving if desired.
