Instant Pot Salsa Sausage and Rice

The weather is getting cooler, but it's still warm enough to want to avoid heating up the kitchen cooking dinner. Plus, this weekend I had a very busy schedule and was thoroughly exhausted when the time came around to cook dinner, meaning I was looking for something that was simple and easy to fix. When I came across this recipe, I realized I'd found exactly what I needed.

With only three main ingredients, this dish comes together easily. Using an Instant Pot, it can be on the table in a matter of minutes. The taste, even with using a medium salsa, is still tame enough for all but the pickiest eaters. And by using relatively inexpensive ingredients like smoked sausage and rice, it can help stretch those food dollars just a little bit more. Seems like a winner all around to me.

Description

A quick and easy dish with three main ingredients. Mild taste, easy on the budget, and quickly prepared in an Instant Pot make this a great choice to get a meal on the table on busy nights for a decent price.

Ingredients
  • 2 tbsp olive oil
  • 24 oz smoked sausage, sliced into 1/4-inch thick disks (2 12-oz packages)
  • 4 1/2 cup chicken broth or stock
  • 3 cup long grain white rice
  • 3 cup chunky salsa, divided
Instructions
  1. Press the Saute button on the Instant Pot and allow to get hot. Add olive oil and the sliced sausage. Cook 3-4 minutes or just enough to get some color on the meat.

  2. Deglaze the bottom of the pot by adding the chicken broth and scraping up any brown bits with a wooden spoon. Press Cancel to turn off the Instant Pot.

  3. Without stirring, evenly spread the rice on top of the sausage, then evenly spread 2 cups of the salsa on top of the rice. Do not mix the ingredients together; this will help avoid getting a burn error while cooking.

  4. Lock the lid on top of the Instant Pot and set the vent valve to Sealing. Press the Pressure Cook button and set to cook on High Pressure for 5 minutes. When cooking is completed, allow the Instant Pot to natural release for 5 minutes, then turn the vent valve to Venting to relieve the remaining pressure. Mix in the remaining cup of salsa and serve.
