In a large skillet, heat olive oil over medium-high heat. Add sausage and onions and cook for about 5 minutes or until the onions are soft and the sausage has started to brown. Add garlic and cook an additional 1-2 minutes.

Add pasta, tomatoes, milk, and chicken stock and stir to combine. Bring mixture to a boil, then reduce heat and cook for 8-10 minutes or until pasta is tender. Remove from heat.

Add cheese and stir until well blended. Let stand 5 minutes for the sauce to thicken before serving.
