This week I had midterm exams for my college courses, so I didn’t have a lot of time to spend in finding and preparing food by any stretch. During a break in studying I came across this recipe for a soup that involved dumping seven cans of ingredients (and a few spices) into a pot and cooking it for 20 minutes, and said “that’s perfect”.
This soup is very mild – even with the addition of cumin and chili powder – so all the flavors really come through and will please even the pickiest eater. This gives you a lot of room to kick up the spices as much as you wish – I’ve included some suggestions at the bottom of the recipe card.

Seven Can Chicken Taco Soup

In a large soup pot combine all ingredients and stir well.

- This soup has a very mild taste. If a spicier result is desired:
- Substitute red (hot) enchilada sauce
- Substitute regular or hot taco seasoning
- Increase amount of cumin/chili powder
- Add sliced jalapeno peppers
