It’s summertime in Texas… and it’s hot. We had a pretty good streak of days that topped 100 degrees, then one short break when a major thunderstorm blew through, and we’re right back up there again.
At times like this it’s simply too hot to cook indoors or out, but you still want to have something that isn’t a sandwich. How about barbecued ribs? But wait, how do you cook them without dragging out the grill or cranking up the oven? I’ve got your answer – use a slow cooker.
This recipe uses country style boneless ribs, which technically aren’t really ribs in the first place; they’re cut from the pork shoulder, which has a similar texture and flavor. But you get the idea. Anyway, this one couldn’t be much simpler – put the ribs into the slow cooker, cover them with a homemade spice rub, and top with your favorite barbecue sauce (I used Sweet Baby Ray’s for this one). Then let the slow cooker do the work. Serve them with potato salad, baked beans, and a Hawaiian sweet roll, and you’ve got yourself an indoor barbecue!

Spray the bottom of a 6-quart or larger slow cooker with nonstick cooking spray, or use a disposable slow cooker liner. Place the ribs in the bottom of the slow cooker.

In a small bowl, combine all remaining ingredients except the barbecue sauce and mix thoroughly. Sprinkle the spice mixture/rub over the ribs, then rub it into the meat to coat it.

Drizzle the barbecue sauce over the ribs and then place the cover on the slow cooker. Cook on High for 3-4 hours or on Low for 7-8 hours.
