In a 5-6 quart slow cooker combine chicken broth, cream of chicken soup, onion soup mix, and pork gravy mix. Whisk together until combined.
Season both sides of the pork chops with garlic powder, then place in the slow cooker, spreading them out as much as possible and covering with the gravy mixture.
Cook on Low for 6 hours.
Toward the end of cooking, whisk together the cornstarch and water in a small bowl until smooth. Gently stir the cornstarch mixture into the gravy.
Turn slow cooker to High and cook for 30 minutes or until gravy has thickened.
